Martin Recipes

This is one of my favorite times of year, the weather changing, school starting, the holidays fast approaching, I just love it.

It also seems along with the weather, the menu changes as well, which made me think of exchanging recipes . Please feel free to post a comment with your favorite recipes for this time of year, as I'm typing this I'm thinking of Great Grandma's Chicken and Dumpling's does anyone have that recipe????

Here's one of my favorites:

Meatballs
1LB of Hamburger
2TBLS bread crumbs
1 Egg
garlic (to taste)
1TSP Basil
1/4 Cup Parmesan
2 TBLS WARM water
splash (pinch) oregano

Roll into balls and throw into hands until firm, cook over medium heat until browne; simmer in sauce

Mom,s Hotcakes...

2 Cups Self Rising Flour
2 Cups Milk
2 Eggs
2 or 3 drops Vanilla extract
3 Tbsp sugar

mix well in large bowl, You might need to add a little more milt to get consistancy right,
heat skillet, add 3 Tbpn cooking oil, I like the cast iron skillet best.
put a large ladel full of batter in skillet and cook until bubbles in batter are open on top approximalty 3 minutes, flip and heat additional 2 to 2 1/2 minutes, butter and add syrup or as Cathy likes smother in grape jelly.

Uncle Lee has the chicken and dumplings recipe...and he makes it quite often. If you work your magic on him I bet he'd let you watch and then enjoy the fruits of his labor.

Best Cake Tip EVER!! (from Cathy)
Use your favorite cake mix and bake as directed. Don't overbake it! When the cake pulls away from the sides and/or the top springs back up after touching it's done.
Cool about 15-30 minutes after baking and then put the cake in the freezer long enough for it to freeze solid. You can leave it in the pan or put it on the serving dish.
Prepare to frost...if you left it in the pan just bang it on the counter or put it on the range for a couple seconds to release from the pan. It's much easier to frost when frozen, and if you're decorating it you'll notice a big difference in smoothing the icing out. Use your favorite frosting.
If you're going to use the cake soon just leave it out after frosting. But if don't need it yet put it back in the freezer till about 6 hours before you need it.
Your results will be a moist and DE-licious cake. I use whatever cake mix is most rea$onable (of the 3 major brands) and ice with a regular store-bought tub frosting. YUMMY!
I just recently bought a Kitchenaid mixer so I'm going to be trying out cakes and breads from scratch. Would welcome your favorite recipes bakers.

Not only does Uncle Lee have the famous and most delicious Chicken and Dunplin' recipe, he has the very best Biscuit and Gravy recipe as well.

As a metter of fact, Uncle Lee is the best cook I have ever had dinner with.

He makes a fantastic Chicken Noodle Soup you know,Vegetable soup and Minestrone, his Chille is out of this world.

Anytime I am invited over to eat... I rearrange my schedule to be there.

Just a little more information than you probably needed on the subject.

My advice on cooking is get the phone book out. That said, have a great day, and I love you all.
